Now like most moms out there I too have the challenge of making sure my son get his veggies and vitamins. First it was a real struggle but during the years I got actually really creative with finding ways of making sure he got what he needed. Instead of starting a battle that could end in a war I decide to involve him in the preparing process of our meals.
Ever since eating veggies and healthy has become a joy in this house hold I become creative with my recipes as well. For example my Hamburgers filled with spinach, Tahitian Spinach with Sausages in a creamy sauce of Avocados or Ciabatta with Pesto, Cheese and Tomatoes from the oven just to name 3. The fun part of all is I prepare these meals together with my son.
Today I will share with you the recipe of the Tahitian Spinach with Sausages in a creamy cheese avocado sauce.
Tahitian spinach or regular spinach
Chicken Bouillon Powder Seasonings
Start with cutting the sausages in thin slices and chop the onions and garlic. Heat some coconut oil in a pan and add the chopped onions, garlic and sliced sausages in it. Add the sea salt, black pepper and chicken bouillon powder seasoning to it. Add the chopped Tahitian spinach to it and cook it untill the vegtables are shrinked down in size. Blend the avocado and add it with the grated cheese to all the ingredients in the pan.
While the Tahitian Spinach with the sausages are swimming in their hot tub of creamy cheese avocado sauce its time to boil the elbow macaroni in hot water with a little bit of coconut oil in it. When the macaroni is done and drained add some coconut oil to it. After that is done the Tahitian Spinach with Sausages in a creamy cheese avocado sauce is ready to be served.
